Italian Matzo Topping
This matzo pizza is inspired by Samantha’s favorite Italian pasta dish, puttanesca and is for the salt lovers at heart. Puttanesca is usually served with pasta with a simple tomato sauce including olives and capers.
A thin layer of marinara is spread over the matzo and then topped with chopped olives, briny capers and shredded mozzarella. After baked, garnish with a few leaves of fresh basil to brighten up all the savory flavors. Go to the recipe
French Matzo Topping
Fig and brie are a match made in flavor heaven. Spread a thin layer of fig jam onto the matzo and top with slices of brie.
After matzo pizza is baked, finish with a bright salad of spicy arugula that is simply dressed with olive oil and lemon juice. Go to the recipe
Thai Inspired Matzo Topping
This Thai matzo pizza may have been my favorite pairing of this set. Mix almond butter, curry paste and a bit of coconut milk together until smooth.
Spread a thin layer onto the matzo and top with thinly sliced purple cabbage and carrots, fresh cilantro and toasted almonds. And for even more spicy kick, a drizzle of sriracha. Go to the recipe
Mexican Inspired Matzo Topping
This Mexican inspired matzo pizza is a play on huevos rancheros, one of our all time favorite breakfasts! Roasted tomatillo salsa is spread onto the matzo and topped with a perfectly fried egg, cilantro and of course, extra hot sauce.
This would also be great with a layer of vegetarian refried beans for extra creaminess. Go to the recipe
Mediterranean Matzo Topping
These toppings are a play off of Sabich, which is an Israeli pita sandwich, filled with fried eggplant, eggs and chopped salad.
Instead, for this matzo version, a thin layer of baba ghanoush is spread onto the matzo and topped with a fresh and crunchy chopped salad, a healthy drizzle of tahini sauce, boiled egg and pickled jalapenos for that added heat.
Hawaiian Inspired Matzo Topping
For this topping, add coconut milk to boiled sweet purple potato and mash together until creamy. Spread a layer onto the matzo and top with chopped macadamia nuts and shredded coconut.
