Baked Parmesan Cauliflower Spinach Latkes by The Preppy Kitchen
Ingredients
- 1lb Caulflower florets, steamed (till soft)
- 1/2 C chopped pinach, steamed or microwaved, squeeze out water as much as possible
- 1/2 C parmesan cheese
- 1/2 C bread crumbs
- 1 egg plus 1 egg white
- 1 crushed garlic clove (frozen cube works)
- salt and pepper to taste
Directions
- Spray baking sheet with oil and set aside
- Place cauliflower and spinach in a large bowl and mash with a fork
- Add 1 egg, parmesan cheese, bread crumbs, garlic and salt
- Mix well and form into balls, flatten into a latke shape
- Place latkes on prepared baking sheet
- Bake at 200 for 10 minutes. Flip latkes and bake for an additional 10 minutes or until crispy
