Sandi’s Best Baked Chicken
Serves 8-10
Ingredients
2kg chicken pieces
1 tbspn olive oil
2 large onions, diced
1 green pepper, diced
3 cloves garlic, crushed
1 tsp cumin seeds
2 tsp paprika
2 tsp chicken stock powder
1 cup water
½ cup tomato sauce
¼ cup white vinegar
¼ cup sweet chilli sauce
¼ cup soy sauce
1 tbspn honey
Method

Heat oil in a large stove top/oven proof pan. Cook onions, green pepper, garlic and cumin seeds until soft and fragrant. Add chicken and cook until pieces are sealed and well coated with mixture. Sprinkle with paprika and stock powder. Mix well.
In a separate bowl combine water, tomato sauce, vinegar, sweet chilli sauce and soy sauce. Pour over chicken and mix well. Bring to the boil. Place in oven and bake uncovered, for 1 hour, basting every 15 minutes.
Drizzle honey over chicken and bake further 30 minutes, or until nicely browned.
